After several vintages of hard trials with some of the best known wine houses in France, the latest to emerge from the Socma stables is the "Cube". It is a revolutionary way of destemming and sorting, maintaining intact berries while eliminating rot and other MOG leaving little to sort and improving quality dramatically for both hand harvested or machine picked fruit. The “Cube” is available in two sizes - a smaller 6 t/hr machine only suitable for hand harvested fruit and a larger 10 t/hr machine that can easily be changed to handle hand as well as machine harvested grapes. With its relatively small footprint, the “Cube” can easily be used in a conventional winery set-up and many have already been installed by the top houses in France and around the world.
The Turbo pigeur is one of the gentlest ways of pumping over red ferments and post ferment lees stirring. It is already being successfully used by several New Zealand wineries. It is a great time saving tool for the time that is needed most, preventing pump over mistakes at the same time.
